The distillation of alcoholic beverages is a process that is carried out in several stages to obtain a final product with a higher alcohol content. It begins with fermentation, where yeast is added to a liquid solution containing sugars. The yeast consumes the sugars and produces alcohol and carbon dioxide as waste products.
After fermentation, a liquid called fermented must is obtained. This wort is subjected to distillation, which is the process of heating the liquid in a still or distiller. When heated, the volatile components of the wort, including the alcohol, evaporate and ascend through a distillation column.
In the distillation column, a gradual separation of the components occurs based on their boiling points. The column may have plates or trays, or a special packing, which allows vapors to rise and contact fresh surfaces for better separation.distillation
As the vapors rise, they cool and condense at the top of the column. Components with lower boiling points, such as alcohol, are condensed first and collected as the desired fraction, known as the "heart" of the distillation. Components with higher boiling points, such as undesirable and unpleasant-tasting compounds, are later condensed and collected as the “head” and “tail” fraction respectively.
After the initial distillation, the distillate obtained, known as "raw alcohol" or "spirit", can go through a process of adjustment and rectification. This involves making additional adjustments to improve the quality and taste of the product. Some of these stages may include filtration to remove impurities, dilution with distilled water to achieve the desired alcohol content, and resting in wooden barrels to age and develop specific flavor characteristics.
It is worth mentioning that the specific processes may vary depending on the type of alcoholic beverage being distilled, such as whiskey, vodka, rum, brandy, among others.
